tofu & tomato gluten-free pasta

I don't know what it is, but I've been craving pasta like mad lately. I can't get enough! I decided to give this recipe a try (with some modifications) and man, oh man... it was good. Martin & I kept commenting between mouthfuls, "it's so simple, but wow, is it good!" Haha, can you tell I'm very enthusiastic about this dish?! ;) Here are the details. Enjoy!

You'll need:

3 cloves garlic
1 large onion, diced
2 tablespoons olive oil
1 green pepper, diced
400g firm tofu
1/3 jar of vegetarian pasta sauce
1 tsp dried basil
1 tsp dried marjoram
1/2 tsp chili flakes
1/4 cup white aged cheddar
2 tbsp chopped green onion
400g pasta (I used gluten-free)

In a medium sized saucepan, saute crushed garlic and chopped onion in olive oil. When slightly golden, add green pepper (I used a yellow one) and cook for a few minutes longer. Crumble your tofu and add to mixture. Cook about 5 minutes, stirring occasionally. Allow any liquid to boil away, or you can drain it. Lastly, add your tomato sauce, dried seasonings and simmer for another 5 minutes.

Cook your pasta, then top with sauce. Garnish with cheddar, green onions, and salt & pepper to taste. Yum!

20 sweet notes:

  1. Does not eating tofu make me a bad vegetarian? Sometimes I wonder. I eat lots of nuts and beans to make up for the potential protein problem and my iron has never been low... but still, every once in a while I think to myself that I should really learn to like it, already. It hasn't happened yet; even the firmest firm tofu is too squishy for my taste, but after reading your rave reviews, I think I may have to give it another go in this dish :) Thanks for sharing, V!

  3. Hey, this looks good! Have you tried spelt pasta btw? Though I don't know if that contains gluten or not, it's another alternative to regular wheat pasta... I had one of "our" protein balls after yoga today and thought of you! It was walnut fudge, have you tried that one? You will die, it's that gorgeous! And sugar free! :3

    1. Oh my. Walnut fudge you say?! Putting it on the list - I haven't tried that flavour yet. And boo I just googled spelt and it looks like it comes from a type of wheat. xo

    2. Spelt is ancient, unrefined wheat, like what stone age people used to eat since they didn't have the tools to refine it the way we do today. If all forms of wheat contain gluten, then I am sorry to dangle false hopes and temptation in front of you!

      Walnut fudge and Macadamia coconut are two of the more mouth-watering ones, or my old favourite, the almond protein balls - which I can buy in bulk so I end up having them most often. Don't like the peanut ones that much, though I guess they taste a little bit like Snickers? XD

  10. I've been into pasta too - specifically spaghetti with meat sauce, Filipino style. We make it sweet so it's appealing to kids. LOL That dish that you posted however looks amazing!
