red lentil and carrot soup

a slightly informal recipe post on the blog today... i'm still trying to kick this darn flu and feeling kind of whiny about it. like really, am i really spending the last precious moments of summer in bed?! apparently, yes. in any case, here's a look at what i'm up to today. making soup, sounds about right. i've been a bit slow with posting recipes lately, but i can't say we've been cooking too much this summer. mostly just chomping on lots of salads and making simple stir fry's. however, when the soup craving calls, it can not be ignored + this one is fabulously easy to make. oh and hey, meet my kitchen helpers! ;)

you'll need:

2 adorable kitchen helpers, hehe
3 tablespoons olive oil
3 medium to large carrots, chopped
1 onion, chopped
2 cloves garlic, chopped
1/2 tbsp fresh rosemary leaves
1/2 cup split red lentils, rinsed
3 cups vegetable stock

heat oil in a saucepan. then add your carrots, onion and garlic with rosemary and saute until lightly golden. next add lentils and veggie stock. bring to a boil. cover and simmer until carrots & lentils are tender. yay, your soup's all done! now, you can either leave as is or blend your soup with a handheld blender in your original soup pot. lastly, if you find your soup a bit too thick, you can add extra veggie stock. garnish with fresh parsley, and salt & pepper to taste. mmmm!!

I honestly can't remember the last time I had a bowl of soup, we've been working with a precarious two-burners-directly-below-plasticised-cupboards system here in Paris which isn't really conducive to simmering anything for long periods of time... but I'm definitely bookmarking this gem for when I'm back home.
