Healthy Living | Black bean, Tofu and Spinach Salad

Today I'm sharing one of my fave & newly created salads. In fact, I made it twice in one day - it was that good! :) Lately, I'm adding lots of salads/raw food to my diet and loving it. It's a great way to get a good dose of minerals and vitamins, plus my skin is thanking me for it. And beans! Absolutely love em'... they're high in fiber & fill you up, have a great range of minerals and protein as well as iron. As always, if you try the recipe, let me know. I'd love to hear what you think!
You'll need:
Spinach
Black beans (canned or pre-made)
Firm tofu
Cheddar cheese, shredded
Almond milk, unsweetened
Mayonnaise
1-2 cloves garlic
Mexican spice
Flaked chilies
Salt & pepper to taste
Wash and trim spinach, place in salad bowl. Next, sprinkle your shredded cheese on top of spinach. I do about 3/4 cup. Meanwhile, in an oiled pan, stir your tofu until golden. Then add your rinsed black beans (if using canned) and add your premixed Mexican spice and flaked chilies. Stir until warm and then let cool for 3-5 minutes. Add beans & tofu mixture to your salad, sprinkle with a little more shredded cheese. Salt & pepper to taste.
Meanwhile for the dressing (I did a really quick one), whisk 1-2 crushed cloves of garlic, with 2-3 tsp of mayo, drizzle of lemon juice and a drizzle of unsweetened almond milk. All done!

I haven't tried almond cheese. But putting it on the list!! I'm really not supposed to eat too much dairy... so that would be perfect for me!! <3

Or, well, at least eat more fruit and vegetables ;) So lovely to see you yesterday, if only briefly. We must plan a proper summer evening soon!

You are just a wealth of yummy-sounding recipes, dearest Veronika!! My challenge is all the restrictions I have with my naturopath-prescribed diet; no nightshades (which means no peppers, tomatoes, potatoes, or eggplant) no cows milk products (with the exception of yogurt) and no vinegar (which can be found in mayonnaise!!) Of course, I could make all sorts of substitutions - which I often do! - but then the recipe is hardly THE recipe anymore!! Still, I enjoy imagining how tasty this salad would be!! XO

I love my tofu!! If you lived near by... I'd make you this salad, you'd be a tofu convert for sure! ;) FYI - I make this salad for my hubby all the time but use chicken instead of tofu and he loves it! xoxo
ReplyDeleteAw, I feel ya! I've been on a very restricted this past year and couldn't do mayo for the longest time... I usually just swapped it for yogurt and it was still awesome. Hope you're enjoying all the sun, sun!! xoxo
ReplyDeleteGreek yogurt, garlic, sea salt and dill!! Have you tried it?! Sooo good as a dip for veggies...and it works as salad dressing, too!!
